Best Muffins EVER!

I made this recipe last night and the resulting muffins were superlative! Toasted coconut on top and coconut tangled with banana on the inside? Perfect.

Banana Coconut Muffins

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 very ripe bananas, mashed (3/4 cup)
1 stick (1/2 cup) unsalted butter, melted
2/3 cup sugar
1 large egg
1/2 teaspoon vanilla
3/4 cup sweetened flaked coconut

Special equipment: a muffin tin with 8 (1/2-cup) muffin cups; paper liners

Put oven rack in middle position and preheat oven to 375°F. Line muffin cups with liners.

Whisk together flour, baking powder, and salt in a bowl. Whisk together bananas, butter, sugar, egg, vanilla, and 1/2 cup coconut in a large bowl until combined well, then fold in flour mixture until flour is just moistened.

Divide batter among lined muffin cups and sprinkle with remaining 1/4 cup coconut. Bake until muffins are puffed and golden, about 25 minutes. Transfer muffins to a rack and cool slightly.

Frat Party: The Morning After

This is how Jamie described the scene in the nursery yesterday morning. Asher and Soren had been awake for a while and were making their usual joyful morning noises so nothing seemed extraordinary. Well, Jamie walked into the nursery to find mayhem in the crib! Soren had pulled his larger blanket over his face and was completely covered. Asher had rolled over so he was lying sideways with both legs dangling out the crib slats. Hard core partying going on in the crib! Those boys...always having the best time ever.

High Concept Peep

My peep is more cute than freaky deak.

Last week on the train I saw a lone protester and she was my inspiration for this year's peep decorating contest. I thought my entry was quite clever even if it didn't win.

Babies at Their Cutest

I love this photo because it highlights the individual cuteness of Soren and Asher. Both babies are endearingly unique (it is SO fun being a parent because seriously, the attachment and preference for one's own children is FIERCE). Soren loves to cover his face with his taggy, which is both stinking cute and terrifying. Cute because he is so focused on the taggy and terrifying because he could choke, right? Well, it's his source of comfort and it keeps him happy. He basically makes out with it all night.

Asher is happiest with his feet in the air and a fist in his mouth. He is enormously adorable and I want to spend all day snuggling with him and nibbling on his cheeks.

So, here you see Soren with his face entirely covered with his taggy and Asher is eclipsed by his feet in the air, which are covered by the blanket. Love, love, LOVE those little baby babes.

Bottle Skillz

Soren can hold a bottle on his own!

Brothers

Brothers together on Easter.

Easter basket from my parents...they are always so great to remember us.

It is basically impossible for me to 'edit' my photo selections. I think all photos of my babies are adorable so I like to post as many as possible. They were soo stinking cute on the couch together. Pretty much we have the most amazing baby babes ever, ever, ever.

First Easter with Asher and Soren

Easter Photos!

Jamie and Asher...so stinking cute.

Love that little guy!

What?

Soren is so freaking cute.

Our first Easter Sunday with Asher and Soren was really sweet. The boys were perfectly behaved at church, as usual. Soren wore the outfit given to him by my co-workers and he looked enormously fetching and adorable. Asher was still too small for his so we put him in a collared button up shirt and he ended up looking like a mechanic--granted, the cutest baby mechanic EVER.

Signs of Spring!

These blooms were wonderfully fragrant! We discovered this plant on our walk through Old Town last week. I love how each year yields some sort of new new and wonderful seasonal discovery.

A Dad and His Boy

Soren got a little sleepy at my birthday party...
